Opening soon: Cochon Butcher

Herbsaint and Cochon Restaurant’s Chef Donald Link with partners Stephen Stryjewski & Warren Stephens are opening Cochon BUTCHER, their own Butcher Shop in New Orleans: The store in the Warehouse District specializes in house made artisan meats such as Salami, Pastrami, Mortadella, & fresh Hams. The butcher shop will also offer Cajun specialties from Donald Link’s heritage like Boudin, Andouille, & Tasso as well as very select high grade cuts of Beef, Lamb, and Pork. The Butcher Sandwich Menu features items like the Butcher Muffaletta, Pastrami on rye or a classic Cuban. All sandwiches are made with house made meats. “Ready to cook” items such as Stuffed Chicken, Duck Confit & Pork Roasts are also available.

Inspired by the design of old-world meat markets, the butcher shop presents a clean look combining tradition & function with contemporary design. The 'meat locker' is a special eye-catcher: The salami cures in a custom made temperature controlled box that takes up a large portion of thse west side wall.

Cochon Butcher serves an eclectic selection of wines to accompany tasting plates of hand made meats, artisan cheeses & sandwiches. The bottles are hand picked by wine buyer Joe Briand, the glasses poured all day. Highly anticipated to be the next hot spot for a quick lunch, an afternoon snack or an after work treat, locals have already nicknamed it the 'swine bar'.
